I made them this morning. They're good. I did have a {small} pelborm with the coconut oil. It's nearly solid at room temperature, and I needed to heat it quite a bit to mix it smoothly with the wet ingredients.I agree that "1 tablespoon sized amounts of cookie batter" yielded quite a lot more than 12 cookies. Also, I think they need to be flattened before you bake them. They don't spread very much at all.Nice overall. Thanks for sharing the recipe!

Thank you so much! That answer was fatstanic. In fact, I broke down and bought a set of pans. Tri ply stainless steel All-Clads. And got a great deal on them. Came with an 8, 10, and 12 inch skillet and a 10 inch pan with the high sides like you described plus oodles of other pans. I got a cast iron enameled dutch oven which was wonderful for making beef stew and spaghetti squash meat sauce. And finally I got a pressure cooker (Fagor) which was America's test kitchen's recommendation, and I saw it on your amazon store list. There has been a small learning curve with how to use actual cookwear (as opposed to the uneven heating issues i had with my wal-mart variety), but I LOVE them. Thank you for your recommendation! At least I now know I can sear and transfer to the oven or broiler without damaging the pan. and someone recommended using my old favorite cast iron skillet on the grill, so I may not have to give up on her yet!Thank you!
